    I had never even heard of this cooking method, so ordered this on a whim. Wow, I am blown away and so glad I took the chance!

    The over 3 lbs of steak pictured were cooked to absolute perfection in a stainless steel mixing bowl, because that was all I had that was deep enough. I’m ordering a better cooking container tonight.

    We prefer our steaks well done, which usually translates to tough and/or dry. Not anymore. These cooked, all at the same time, in separate sealed bags to a perfect doneness for us, but still soft, tender, and juicy. The meat was falling off the bone, could be cut by a fork, didn’t even need a knife. These steaks are 3/4″ thick. It took 24 minutes. Had I chosen, I could have left them in the water for another hour or so while I was preparing side dishes.

    This appliance runs completely from an app on my phone. The only thing I did was plug it in. I was able to choose the cut of meat, got suggestions on how to season it, and pick out the picture of how I wanted it to look when cooked. And it WORKED. The first time. I had never done this before. It’s foolproof.

    All of this from something that is just a rod looking device. It can be stored anywhere. You can cook in any deep pot you have, or even a mixing bowl, as I did. You don’t need to buy anything if you don’t want to.

    I’m completely impressed, as is my family. All three steaks were done exactly evenly, all over. I’ve never seen anything like it.

    I’ve wanted to try sous vide cooking for a long time, and I’ve had my eye on a lot of Breville products for years, so I was very excited to try this! I didn’t really know where to start- I looked on Pinterest for recipe inspiration before it even arrived. Once you connect to the app, there are so many recipes and ideas there! You can start with a basic recipe for steak, pork, chicken, or burgers. There’s also a link in the app to a facebook community for the joule and there you’ll see a lot of people sharing their sous vide meals and get a lot of helpful info from regular people with experiencing using the joule or joule turbo.

    Even though I had been curious about sous vide cooking, I never took a chance and bought one because I wasn’t completely convinced that a steak cooked in a bag fully appealed to me, but it cooks so consistently to whatever temperature you want and keeps in all the juiciness. Once you add a quick hot sear, it’s perfect! And it’s so much more versatile than I realized. I didn’t think much past meat and things like Starbucks’s egg bites, but the app has recipes for everything from sauces to elaborate meals, plus things like cheesecake, jams, yogurt, and confit.

    Another misconception I had was that I would need to order special bags to seal in my foods, but you only need regular zip style food storage bags, and there’s also a whole section of the app dedicated to recipes you can cook in a jar! The app walks you through the entire process starting with choosing the meat and temperature you want it cooked to. It’s very beginner friendly but seems like it would have a lot to offer even for people who have been using a sous vide cooker for years. I’m very excited about my new high tech cooking device and can’t wait to try more things beyond a simple steak!

    So, this requires an app to control, which requires you to register an account, and also requires you to give the device permanent internet connectivity. I hate that.
    But that does give it lots of extra options and flexibility, like downloading recipes for it, and turning it on or off from anywhere. For example, turning it on at work so you come home to a fresh-cooked meal waiting for you. So I call that a wash.

    If you’re unfamiliar with sous vide, the idea is that you vacuum seal your food in little bags and cook it at a low temperature. Like a slow-cooker, but fast because it uses a jet of water for convection.
    It’s like the air-fryer of crock-pots.
    This does not come with a vacuum sealer or any baggies, but you CAN just use ziplock bags.
    Also, they make a special plastic pot to use with this, but any put will work if it’s deep enough to cover the convection jet.

    It does work well, it cooks meat all the way through in about 2 hours depending what it is and how big it is, etc., and the meats stays very tender.
    Great for squeamish people who hate any pink in their meat, but also don’t like their meat to have the texture of a shoe.

    I will say though that my device lost connectivity part-way through cooking (I think it installed an update), and it just kept cooking and never shut off on its own. I don’t know what that was about, but it’s a potential issue.

    Anyway, it DOES work well (mostly), just be aware of the quirks and what you’re getting yourself into.

    I already had the app from my Breville oven and when I scanned the qr code it did not prompt to the sous vide. I researched online and played with the app and eventually found the add a device prompt and then I was off and running. I’ve used sous vide a handful of times (I have a Anova) and enjoyed the food but was not a fan of the lengthy cook times, so the faster/turbo device was interesting to me. Last week I used the Joule Turbo to prepare pork tenderloin (it was tender and juicy at 145* in about 35 minutes – except for the browning and the preheat). Today I did hard boiled eggs (for deviled eggs) they turned out very tender and the yolk was silky (157* for 20 minutes after the preheat). I used the recipes from the app in both instances. The in app recipes are nice but I do wish they would state the cooking time and temperature as opposed to having to go through multiple screens to get that information, it’s very limiting in terms of using your own recipe or recipes from the internet. I saw that you can set the device to a time/temp without using a recipe, but haven’t invested the time to research how that is done. The app start/stop and notifications are certainly on trend for our fascination with our phones, however, not being able to use the device without the app seems a step too far for me. Definitely a learning curve for me. I love Breville and own several of their appliances… maybe I am just a couple generations too old for these newer appliances.
